Single Vineyard Hilltops Cabernet Sauvignon

McWilliam's Single Vineyard Hilltops Cabernet Sauvignon is sourced from two blocks of Cabernet vines on the gentle inland slopes of the Hilltops region.
The approach is to source quality fruit from a single, meticulously managed vineyard. The blocks are owned and maintained by the winery's own vineyard manager, Chris Coddington.
The grapes are crushed into open fermenters. After a minimum maceration of 14 days, the juice is gently pressed and racked to 35% new French oak hogsheads. After ageing for 12 months the wine is blended and bottled.
Vibrant red purple, McWilliam's Single Vineyard Hilltops Cabernet Sauvignon has dark fruit flavours with notes of cassis, fine dry tannins and a long finish. Cellaring potential is 12 years.
